No Bake Oatmeal and Honey Bites

IMG_3054Found this recipe in the Sam’s Club magazine that arrived in the mail.  Turned out to be very tasty:

No Bake Energy Bites

Makes 20 – Prep time:  15 minutes

Ingredients: 1/3 cup honey — 1/2 cup peanut butter — 1/2 cup mini chocolate chips (I used dairy-free chocolate chips) — 1/2 cup ground flaxseed  — 1 cup oatmeal (I ground it up a little bit) — 1 tsp vanilla — 1 cup coconut flakes

Cooking Directions:  1. In a large bowl mix honey, peanut butter, chocolate chips, flaxseed, oatmeal and vanilla until well-blended.   2.  Pour coconut flakes into a small bowl.  3.  Shape honey mixture into balls, roughly the size of a golf ball, and roll in coconut flakes.  4.  Chill until firm.  Serve.
